These no-cook jars thicken in the refrigerator as the oats and chia absorb the milk. Mix them in the evening, then stir once before serving to break up any chia clumps. The recipe makes two generous portions and can be doubled in a larger bowl.
Makes: 2 jars
Prep: 10 minutes
Cook: None
Ingredients
- 1 cup old-fashioned rolled oats
- 2 tablespoons chia seeds
- 1 cup milk
- 1/2 cup plain yogurt
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1 cup blueberries, fresh or thawed frozen
- Pinch of fine salt
- 2 tablespoons sliced almonds, optional
Method
- In a medium bowl, stir the oats, chia seeds, milk, yogurt, maple syrup, vanilla, and salt until evenly combined.
- Let the mixture stand for 5 minutes, then stir again so the chia seeds do not collect at the bottom.
- Divide half the oat mixture between two lidded jars. Add half the blueberries to each jar, then cover with the remaining oat mixture.
- Add the lids and refrigerate for at least 6 hours, preferably overnight.
- Before serving, stir each jar and check the texture. Add a splash of milk if it has thickened more than you like.
- Top with the remaining blueberries and sliced almonds, if using. Serve cold.
Variations
Use raspberries or diced peaches instead of blueberries. Dairy-free milk and a suitable plain non-dairy yogurt can replace the dairy ingredients. For extra sweetness, add another teaspoon of syrup at serving rather than changing the whole batch.
Storage and reheating
Keep the covered jars refrigerated and use within 3 days. Add crunchy toppings just before serving. This is a chilled recipe and does not need reheating.
