Blueberry Cornmeal Breakfast Muffins

Blueberry Cornmeal Breakfast Muffins

Fine cornmeal adds a slight crunch to these blueberry muffins without making them dry. Tossing the berries with a little flour helps distribute them through the batter. The recipe makes twelve standard muffins; let them cool before storing so steam does not soften the tops.

Makes: 12 muffins
Prep: 15 minutes
Cook: 20 minutes

Ingredients

Method

  1. Heat the oven to 375°F. Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk 1 1/4 cups flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the egg, buttermilk, oil, and vanilla until combined.
  4. Toss the blueberries with the remaining 1/4 cup flour. Stir the wet mixture into the dry ingredients just until no dry flour remains, then fold in the berries.
  5. Divide the batter among the muffin cups, filling each about three-quarters full. Sprinkle with coarse sugar if using.
  6. Bake for 18 to 22 minutes, until the tops spring back lightly and a tester inserted in the center comes out without wet batter. Cool in the tin for 5 minutes, then move to a rack.

Variations

Use raspberries in place of blueberries, or add 1 teaspoon lemon zest to the wet ingredients. If using frozen berries, keep them frozen until folding them in and expect the muffins to need a minute or two longer.

Storage and reheating

Cool completely. Store in a covered container at room temperature for 2 days or refrigerate for up to 4 days. Rewarm briefly in a low oven or microwave. Freeze cooled muffins for up to 2 months.
