These pancakes use a quick buttermilk batter and a moderately warm skillet. A few small lumps are fine, and a short rest helps the flour hydrate while the pan heats. The recipe makes about ten 4-inch pancakes, enough for four servings.
Serves: 4
Prep: 10 minutes
Cook: 20 minutes
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 large egg
- 1 1/4 cups buttermilk
- 3 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 tablespoon neutral oil or butter, for the pan
- Maple syrup and berries, to serve
Method
- Whisk the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a second bowl, whisk the egg, buttermilk, melted butter, and vanilla. Pour the wet ingredients into the dry ingredients and stir just until the flour is moistened. Leave a few small lumps.
- Rest the batter for 5 minutes. Meanwhile, warm a nonstick or well-seasoned skillet over medium heat and lightly grease it.
- Spoon about 1/4 cup batter per pancake into the pan. Cook until bubbles appear across the surface and the edges look set, about 2 minutes.
- Flip once and cook for 1 to 2 minutes, until the second side is golden and the center springs back lightly. Adjust the heat if the outsides brown before the centers cook.
- Repeat with the remaining batter, greasing the pan as needed. Serve warm with syrup and berries.
Variations
Fold 1/2 cup blueberries into the batter, or replace the vanilla with 1/2 teaspoon cinnamon. If buttermilk is unavailable, stir 1 tablespoon lemon juice into 1 1/4 cups milk and let it stand for 5 minutes.
Storage and reheating
Cool extra pancakes, then refrigerate in a covered container and use within 3 to 4 days. Reheat in a dry skillet or toaster until warm. Freeze separated by parchment for up to 2 months and reheat from frozen.
