These wraps borrow the familiar flavors of Caesar salad but keep the lettuce crisp by using a modest amount of dressing. Warm tortillas briefly so they fold without splitting, and keep juicy tomatoes out of the wrap until serving. They work well with leftover cooked chicken.
Serves: 4 wraps
Prep: 15 minutes
Cook: 8 minutes
Ingredients
- 1 pound boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1/2 teaspoon fine salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 4 cups chopped romaine lettuce, washed and dried
- 1/3 cup plain Greek-style yogurt
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 small garlic clove, finely grated
- 1/4 cup finely grated Parmesan
- 1/2 cup toasted croutons, lightly crushed
Method
- Season chicken with olive oil, salt, and pepper. Cook in a skillet over medium heat for 5 to 7 minutes per side, until the thickest part reaches 165°F. Rest for 5 minutes, then slice thinly.
- Whisk yogurt, lemon juice, Dijon, garlic, and Parmesan in a bowl. Add 1 teaspoon water if the dressing is too thick.
- Toss romaine with just enough dressing to coat lightly. Keep remaining dressing separate for serving.
- Warm tortillas in a dry skillet for about 15 seconds per side. Divide lettuce, chicken, and crushed croutons down the center of each tortilla.
- Fold the sides inward and roll tightly from the bottom. Cut in half and serve soon after assembly.
Variations
Use chopped cooked turkey in place of chicken, or add thin shavings of cucumber. For a vegetarian wrap, replace chicken with roasted chickpeas. Keep croutons whole until assembly so they contribute crunch.
Storage and reheating
Refrigerate cooked chicken for up to 3 to 4 days and keep it separate from lettuce, dressing, and tortillas. Assemble wraps shortly before eating. If packing a fully assembled wrap, keep it chilled and put croutons in a small side container.
