Frozen mango makes this smoothie cold and thick without ice. Kefir gives it a pleasantly tart base, while a small amount of oats makes the drink more substantial in texture. Blend until completely smooth and add liquid gradually if your blender needs help. This recipe makes two glasses.
Makes: 2 servings
Prep: 8 minutes
Cook: None
Ingredients
- 2 cups frozen mango chunks
- 1 1/2 cups plain kefir
- 1/4 cup old-fashioned rolled oats
- 1 tablespoon honey or maple syrup, optional
- 1 tablespoon lime juice
- 1/4 teaspoon ground cardamom, optional
- 1/4 cup cold water, plus more as needed
Method
- Add the kefir, oats, lime juice, and cardamom if using to a blender. Blend for 20 seconds to break up the oats.
- Add the frozen mango and honey if using. Blend on low, then increase to high until smooth.
- Stop the blender and scrape down the sides if fruit sticks near the blade.
- Add cold water 1 tablespoon at a time if the mixture is too thick to blend or pour.
- Taste and adjust the lime or sweetness. Divide between two glasses and serve immediately.
Variations
Use frozen peaches in place of some of the mango, or replace kefir with plain yogurt thinned with milk. Leave out cardamom for a simple fruit-and-lime flavor.
Storage and reheating
This drink is best just after blending. If needed, refrigerate in a sealed jar and use the same day; shake well before serving. Do not leave it at room temperature for an extended period.
