These small turkey patties are seasoned with sage, pepper, and a little maple syrup. Mix just until the seasonings are distributed, then cook a test patty and adjust the salt before shaping the rest. The batch makes eight patties for breakfast plates or sandwiches.
Makes: 8 patties
Prep: 15 minutes
Cook: 12 minutes
Ingredients
- 1 pound ground turkey
- 1 tablespoon pure maple syrup
- 1 teaspoon finely chopped fresh sage
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon fine salt
- 1/4 teaspoon black pepper
- 1 tablespoon neutral oil, for the skillet
Method
- Put the turkey, maple syrup, sage, thyme, garlic powder, salt, and pepper in a bowl. Mix with a fork just until evenly combined.
- Shape the mixture into eight patties about 1/2 inch thick. Keep them chilled while the skillet heats if you are not cooking them right away.
- Warm the oil in a large skillet over medium heat. Add the patties in a single layer, working in batches if needed.
- Cook for 5 to 6 minutes per side, adjusting the heat so the outside browns without scorching.
- Check the center of a patty with a food thermometer. Ground turkey should reach 165°F. Cook longer if needed, then serve hot.
Variations
Use ground chicken instead of turkey and keep the same doneness check. Add a pinch of crushed fennel seed for a more pronounced sausage flavor, or leave out the maple syrup for a less sweet patty.
Storage and reheating
Refrigerate cooked patties promptly in a covered container and use within 3 to 4 days. Reheat until steaming throughout. Freeze cooked, cooled patties with parchment between them for up to 2 months.
