Clafoutis is a simple fruit bake with a thin batter that sets softly around the fruit. A ripe but firm pear holds its shape, while a little almond flour adds a nutty note. Let the dish rest before slicing so the custard settles. Use a 9-inch pie dish or similar baking dish.
Serves: 6
Prep: 15 minutes
Cook: 35 minutes
Ingredients
- 2 ripe but firm pears, cored and thinly sliced
- 1 tablespoon unsalted butter, for the dish
- 3 large eggs
- 1/3 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup almond flour
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine salt
- 2 tablespoons sliced almonds
- Powdered sugar, optional
Method
- Heat the oven to 350°F. Butter a 9-inch pie dish and arrange the pear slices across the base.
- Whisk the eggs and sugar in a bowl until combined. Whisk in the all-purpose flour, almond flour, and salt.
- Slowly whisk in the milk and vanilla until the batter is smooth and pourable.
- Pour the batter over the pears and scatter sliced almonds on top.
- Bake for 32 to 38 minutes, until the edges are lightly golden and the center is just set with a slight wobble.
- Rest for at least 15 minutes before slicing. Dust with powdered sugar if desired.
Variations
Use thin apple slices instead of pears, or replace the almond flour with an equal amount of all-purpose flour. If using a deeper dish, allow extra baking time and check the center.
Storage and reheating
Cover and refrigerate leftovers within 2 hours and use within 3 days. Serve chilled or warm individual slices briefly in a low oven.
