Roasted Cauliflower Wraps with Lemon Tahini

Roasted Cauliflower Wraps with Lemon Tahini

These wraps turn a head of cauliflower into a warm lunch filling with browned edges and a smooth lemon tahini sauce. Cut florets into similar sizes so the smaller pieces do not burn before the larger ones soften. Add the sauce at assembly to keep the vegetables from making the bread damp.

Serves: 4 wraps
Prep: 15 minutes
Cook: 25 minutes

Ingredients

Method

  1. Heat the oven to 425°F. Toss cauliflower with olive oil, cumin, paprika, salt, and pepper.
  2. Spread the florets in a single layer on a rimmed sheet pan. Roast for 20 to 25 minutes, turning once, until tender with browned edges.
  3. Whisk tahini, lemon juice, and cold water until smooth. Add water a teaspoon at a time if it is too thick to drizzle.
  4. Warm tortillas in a dry skillet for about 15 seconds per side. Add lettuce, roasted cauliflower, parsley, and pickled onions.
  5. Drizzle with lemon tahini, fold in the sides, and roll each tortilla tightly. Serve warm or let the cauliflower cool before packing.

Variations

Add drained chickpeas to the sheet pan for the final 15 minutes, or use smoked cumin instead of regular cumin. Replace parsley with mint, or add sliced cucumber for extra crunch. Use pita or flatbread if you prefer an open wrap.

Storage and reheating

Refrigerate roasted cauliflower and tahini separately in covered containers for up to 4 days. Reheat cauliflower in a 375°F oven until hot, then assemble with fresh lettuce and sauce. Keep fully assembled wraps chilled and eat the same day.
