A twice-baked potato turns a few familiar ingredients into a warm, substantial lunch. Bake the potatoes until their centers are tender, then mix the scooped potato with broccoli, cheddar, and yogurt. The shells hold the filling for a second trip to the oven, where the tops brown. Use russet potatoes of similar size so they finish together.
Serves: 4
Prep: 15 minutes
Cook: 65 minutes
Ingredients
- 4 medium russet potatoes, scrubbed and dried
- 1 tablespoon olive oil
- 2 cups small broccoli florets
- 1/2 cup plain Greek-style yogurt
- 1 tablespoon milk
- 1/2 teaspoon fine salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded sharp cheddar, divided
- 2 scallions, thinly sliced
Method
- Heat the oven to 425°F. Prick each potato several times with a fork, rub with olive oil, and place directly on the oven rack. Bake for 45 to 55 minutes, until a knife slides easily into the center.
- Steam the broccoli for 4 to 5 minutes, until tender but still bright. Chop it into small pieces.
- Let the potatoes cool until easy to handle. Slice each lengthwise and scoop the centers into a bowl, leaving a sturdy 1/4-inch shell.
- Mash the potato with yogurt, milk, salt, and pepper. Fold in the broccoli, 1 cup cheddar, and half the scallions.
- Spoon the mixture back into the shells and place them on a baking sheet. Top with the remaining cheddar.
- Bake for 10 to 12 minutes, until the filling is hot and the cheese is melted. Sprinkle with the remaining scallions and serve.
Variations
Use chopped cooked cauliflower instead of broccoli, or replace cheddar with Monterey Jack. Add 2 tablespoons chopped cooked bacon if desired. If the filling seems dry, stir in milk 1 tablespoon at a time.
Storage and reheating
Refrigerate cooled potatoes in a covered container and use within 3 to 4 days. Reheat in a 350°F oven until hot in the center, or microwave individual portions. If reheating in the microwave, the skin will be softer.
