Parchment Salmon and Potato Packets

Parchment Salmon and Potato Packets

These parchment packets bring salmon, thinly sliced potatoes, and green beans together in the oven. The potatoes need to be sliced thinly so they cook in the same time as the fish. Open the packets carefully because the trapped steam is hot.

Ingredients

Method

  1. Heat the oven to 425°F. Cut four large pieces of parchment, each about 15 inches long.
  2. Toss the potato slices with 1 tablespoon of the oil and half the salt. Divide them among the parchment sheets, arranging each portion in a compact layer.
  3. Divide the green beans and salmon among the sheets. Drizzle with the remaining oil, then add lemon slices, dill, the remaining salt, and pepper.
  4. Bring the long sides of each parchment sheet together and fold them down several times. Twist or fold the ends closed so each parcel can hold steam. Place the packets on a rimmed baking sheet.
  5. Bake for 18 to 22 minutes, depending on the thickness of the salmon and potatoes. Carefully open one packet. Check that the potatoes are tender and the thickest part of the fish reaches 145°F. If needed, reseal and bake a few minutes longer.
  6. Set the packets on plates and open them carefully, keeping your face away from the escaping steam.

Variations

Replace dill with a few thyme leaves, or add thinly sliced zucchini alongside the green beans. Keep potato slices thin and even; thicker pieces may need a head start in the oven.

Storage and reheating

Refrigerate leftovers promptly in a covered container and use within 3 to 4 days. Reheat gently in a covered oven-safe dish until steaming, or flake the salmon into a freshly warmed grain bowl. Avoid reheating a sealed parchment packet in a microwave.
